Offal

Offal are a category of meat products that include the edible parts of the animal other than the usual muscles. They include the liver, kidneys, heart, tongue, brain, sweetbreads, spleen, cheek, tail, feet, and even bones.

Although largely absent from our plates, offal are in high demand and sought after in certain foreign markets. They are used in many cuisines (French, Chinese, Italian, etc.) and are part of the culinary heritage.

Rich in quality proteins and vitamins, sources of minerals and often leaner than some meats, offal have many nutritional advantages.
